NAIT Hokanson Centre for Culinary Arts

NAIT School of Hospitality has been providing skilled graduates to the Hospitality industry for close to 40 years. The school trains over 500 students per year in various hospitality-related programs. Stemming from a $1 Million donation from the Hokanson family, in 2004, NAIT undertook renovations to its uninviting and outdated culinary arts labs. The result is perhaps the most modern and technologically-advanced culinary training facility in Canada.
Calvin Reivonen, C.E.T. and manager of NAIT's Capital Projects department was the project manager for the Hokanson Centre for Culinary Arts renovation project. Calvin will briefly discuss the design process, renovation challenges, and facility features. Following Calvins discussion a tour of the culinary arts lab will be given. A three course meal consisting of the following menu will be served:
The Classic Hot and Sour Soup (Prawns and crabmeat, glass noodles)
Roasted Chicken Supreme (Mushroom Duxelle and Pancetta Bacon Filling, Champagne Watercress Cream. Wheat Berry Mashed Potatoes)
Chocolate Hazelnut Fudge Cake (Banana Ice Cream, Espresso Creme Anglaise)
